This dish is full of delicious veggies and fertility-boosting vitamins and minerals. And once you prep the veggies &#8211; some dicing here, some mincing here, some shredding there &#8211; it&#8217;s also incredibly easy,&nbsp;cooking up in&nbsp;just about 15 minutes.<\/p>\n<h2>Try the light cauliflower fried rice with others<\/h2>\n<p>Serves: 2-4<\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>\u00bd tablespoon olive oil<\/li>\n<li>\u00bc&nbsp;cup onion, diced<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>\u00bd cup frozen peas<\/li>\n<li>1 cup carrots, shredded<\/li>\n<li>3 cups cauliflower,&nbsp;grated<\/li>\n<li>2 eggs, scrambled<\/li>\n<li>3 tablespoons soy sauce<\/li>\n<li>cilantro, chopped (optional)<\/li>\n<\/ul>\n<h3>Directions<\/h3>\n<ol>\n<li>To a large pan, add olive oil, onions, and garlic. Cook on medium heat 2-3 minutes.<\/li>\n<li>Add frozen peas and carrots. Cook 3-5 minutes.<\/li>\n<li>Add cauliflower, eggs, and soy sauce. Stir frequently. Cook another 5-7 minutes or until most of the liquid is evaporated.
