{"id":2030,"date":"2017-07-10T11:45:25","date_gmt":"2017-07-10T15:45:25","guid":{"rendered":"https:\/\/wp.oviahealth.com\/guide\/2030\/pregnancy-recipe-crock-pot-quinoa-and-veggie-stew\/"},"modified":"2021-10-20T15:40:39","modified_gmt":"2021-10-20T19:40:39","slug":"pregnancy-recipe-crock-pot-quinoa-and-veggie-stew","status":"publish","type":"article","link":"https:\/\/www.oviahealth.com\/guide\/2030\/pregnancy-recipe-crock-pot-quinoa-and-veggie-stew\/","title":{"rendered":"Crock pot quinoa and veggie stew healthy pregnancy recipe"},"content":{"rendered":"<div class=\"row-fluid\">\n<div class=\"span12 analysis-feedback\">\n<div class=\"media\"><a class=\"pull-left\" href=\"#\"> <\/a><\/p>\n<div class=\"media-body\">\n<p>Quinoa &#8211; so hot right now &#8211; and with serious helpings of protein, iron, fiber and calcium, the &#8220;Big Q&#8221; shows that it has rightfully earned a spot in the pregnancy food hall of fame &#8211; but don&#8217;t let all of the healthiness fool your taste buds &#8211; this is one delicious dish!<\/p>\n<p><strong>Serves:<\/strong> 4<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"resource-content\">\n<div class=\"row-fluid\">\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>1 large onion<\/li>\n<li>2 cloves of garlic<\/li>\n<li>2 medium carrots<\/li>\n<li>2 stalks of celery<\/li>\n<li>2 large potatoes<\/li>\n<li>3 zucchini \/ courgettes<\/li>\n<li>1 red bell pepper<\/li>\n<li>300 g (10.6 oz) sweet tomatoes, like cherry tomatoes<\/li>\n<li>1 can of cannellini beans (or baked beans)<\/li>\n<li>150 g (5.3 oz) quinoa<\/li>\n<li>3 bay leaves<\/li>\n<li>700 ml (23.6 oz fl) water<\/li>\n<li>Extra virgin olive oil<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<h4><strong>Directions<\/strong><\/h4>\n<ol>\n<li>Peel and cut all the vegetables into small pieces.<\/li>\n<li>Fry the onion with plenty of olive oil, then add the garlic after a few minutes.<\/li>\n<li>When the onions are golden, add all the vegetables with the bay leaves and 700 ml of water.<\/li>\n<li>Stir and continue to cook over a low heat for 1 hour and 20 minutes (but add the beans after 40 minutes of cooking time).<\/li>\n<li>When the vegetables are cooked add the quinoa, then stir and cook for another 10 minutes.<\/li>\n<li>Turn off the heat and cover with a lid.
