It also contains lots of potassium to help regulate your electrolyte levels.<\/p>\n<p><strong>Serves:<\/strong> 2-4<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"resource-content\">\n<div class=\"row-fluid\">\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>1\/2 tablespoon olive oil<\/li>\n<li>1\/4 cup onion, diced<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>1\/2 cup frozen peas<\/li>\n<li>1 cup carrots, shredded<\/li>\n<li>3 cups grated cauliflower<\/li>\n<li>2 eggs scrambled<\/li>\n<li>3 tablespoons soy sauce<\/li>\n<li>Cilantro, chopped (optional)<\/li>\n<\/ul>\n<h4><strong>Directions<\/strong><\/h4>\n<ol>\n<li>To a large pan add olive oil, onions, and garlic. Cook on medium heat 2-3 minutes.<\/li>\n<li>Add frozen peas and carrots. Cook 3-5 minutes.<\/li>\n<li>Add cauliflower, eggs, and soy sauce. Stir frequently.
