This curried carrot shorba is a wonderful combination of taste and health.<\/p>\n<p><strong>Serves:&nbsp;<\/strong>4<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"resource-content\">\n<div class=\"row-fluid\">\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>1\/2 red onion, roughly chopped<\/li>\n<li>5 medium carrots, roughly chopped<\/li>\n<li>3 garlic cloves, peeled and roughly chopped<\/li>\n<li>1 tbsp canola or coconut oil<\/li>\n<li>salt<\/li>\n<li>1\/2 tsp turmeric<\/li>\n<li>1\/2 tsp curry<\/li>\n<li>1 tsp fresh thyme, woody stems removed<\/li>\n<li>4 cups water<\/li>\n<\/ul>\n<h4><strong>Directions<\/strong><\/h4>\n<ol>\n<li>Pre heat oven to 425 F<\/li>\n<li>Toss onions, carrots and garlic with the oil and evenly spread on a large rimmed sheet pan. Roast in the oven for 20-25 minutes or until tender and caramelized.<\/li>\n<li>Remove from the oven and add roasted veggies to a medium soup pot &#8211; add spices, salt (to taste), thyme and water. Bring soup to a boil and simmer for 5 minutes.
