Consider making two and freezing one for later.&nbsp;<\/p>\n<p><strong>Makes 4&nbsp;servings \/ Prep time: 15&nbsp;minutes \/ Total time: 1 hour 15 minutes<\/strong><\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>1 teaspoon olive oil<\/li>\n<li>1 large whole egg<\/li>\n<li>1 large egg white<\/li>\n<li>1\u00bd cups panko bread crumbs<\/li>\n<li>\u00bc teaspoon dried oregano<\/li>\n<li>\u00bc teaspoon kosher salt<\/li>\n<li>1 large eggplant, sliced crosswise into&nbsp;\u00bc-inch, round slices (you need at least 12 slices)<\/li>\n<li>2 cups marinara sauce<\/li>\n<li>2 cups chopped baby spinach, divided<\/li>\n<li>\u00be cup shredded part-skim mozzarella cheese, divided<\/li>\n<li>\u00bd cup grated Parmesan cheese, divided<\/li>\n<li><span style=\"font-weight: 400;\">\u2153 cup coarsely chopped fresh basil, divided<\/span><\/li>\n<\/ul>\n<h4><strong>Directions<\/strong><\/h4>\n<ol>\n<li style=\"font-weight: 400;\">Preheat the oven to 375<span style=\"font-weight: 400;\">\u2109.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Grease a large baking sheet with the oil.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Whisk the whole egg with the egg white in a shallow bowl until frothy.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">In a separate bowl, combine the bread crumbs, oregano, and salt and stir to combine. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Dip both sides of each eggplant in the egg wash, then coat with the bread crumbs and place on the baking sheet.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Bake the eggplant until each slice is soft and the bread crumbs have begun to brown, flipping once halfway through, about 20 minutes.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">When the eggplant has finished cooking, turn the oven up to 400\u2109.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Spread one-third of the marinara on the bottom of a 13 x 9-inch or 11 x 7-inch baking dish. Add a layer of 6 baked eggplant rounds.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Top with another one-third of the sauce, half the spinach, half the mozzarella, half the Parmesan, and half the basil.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Repeat with the next layer of eggplant, the remaining sauce, the remaining spinach, and the remaining mozzarella and Parmesan.&nbsp;<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Finish by sprinkling with the remaining basil.
