The addition of saut\u00e9ed spinach and fried eggs takes French fries to the meal-worthy level. And the potatoes and spinach both deliver magnesium to the nutrient profile of this nosh.&nbsp;<\/p>\n<p><strong>Makes 2&nbsp;servings \/ Prep time: 15&nbsp;minutes \/ Total time:&nbsp;40 minutes<\/strong><\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>1 large russet potato, scrubbed but not peeled<\/li>\n<li>2 tablespoons olive oil, divided<\/li>\n<li>\u00bd teaspoon coarse sea salt, divided<\/li>\n<li>\u00bc teaspoon chili powder<\/li>\n<li>\u00bc teaspoon garlic powder<\/li>\n<li><span style=\"font-weight: 400;\">\u215b teaspoon freshly ground black pepper<\/span><\/li>\n<li><span style=\"font-weight: 400;\">4 cups baby spinach<\/span><\/li>\n<li><span style=\"font-weight: 400;\">4 large eggs<\/span><\/li>\n<\/ul>\n<h4><strong>Directions<\/strong><\/h4>\n<ol>\n<li style=\"font-weight: 400;\">Preheat the oven to 450<span style=\"font-weight: 400;\">\u2109.<\/span><\/li>\n<li style=\"font-weight: 400;\">Slice the potato lengthwise into&nbsp;\u00bc-inch slices. Then slice each of those lengthwise into&nbsp;\u00bc-inch square fry-shaped rods.<\/li>\n<li style=\"font-weight: 400;\">Toss with 1 tablespoon of the oil,&nbsp;\u00bc teaspoon of the salt, the chili powder, garlic powder, and pepper.<\/li>\n<li style=\"font-weight: 400;\">Arrange the potato sticks on a baking sheet so they aren&#8217;t touching and bake until golden and crispy, about 30 minutes, turning once.<\/li>\n<li style=\"font-weight: 400;\">In a medium skillet over medium heat, saut\u00e9 the spinach in&nbsp;\u00bd tablespoon of the oil until wilted, about 4 minutes. Sprinkle with the remaining&nbsp;\u00bc teaspoon salt and set aside.<\/li>\n<li style=\"font-weight: 400;\">In the same skillet, add the remaining&nbsp;\u00bd tablespoon oil and cook eggs to your preferred doneness.
