But unlike traditional ice cream, soft-serve, and fro-yo, this doesn&#8217;t have any added sugar, is packed with vitamins, and even has protein and fiber for good measure. All we really needed to say was &#8220;peanut butter and banana,&#8221; though right? Elvis will be smiling down from heaven when you make this recipe.&nbsp;<\/p>\n<p><strong>Makes 4&nbsp;servings \/ Prep time: 7&nbsp;minutes + overnight \/ Total time:&nbsp;7 minutes<\/strong><\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>3 large very ripe bananas, cut into&nbsp;\u00bc-inch slices and frozen at least 4 hours (or overnight)<\/li>\n<li>2 tablespoons unsalted natural peanut butter<\/li>\n<li>3 tablespoons low-fat milk or unsweetened dairy-free alternative<\/li>\n<li>2 tablespoons chopped roasted peanuts<\/li>\n<\/ul>\n<h4><strong>Directions<\/strong><\/h4>\n<ol>\n<li style=\"font-weight: 400;\">Add the frozen bananas to a blender or food processor and pulse until they begin to crumble. If you&#8217;re using a blender, you may need to use a spatula to push the bananas down in between pulses.&nbsp;<\/li>\n<li style=\"font-weight: 400;\">Continue to pulse until the bananas start to look gooey, then turn the blender on and run until the mixture resembles soft-serve ice cream, about 3 minutes total.<\/li>\n<li style=\"font-weight: 400;\">Spoon the bananas into a freezer container and transfer to the freezer while you make the peanut sauce, or for at least 15 minutes.<\/li>\n<li style=\"font-weight: 400;\">Place the peanut butter and milk in a microwave-safe container and microwave on high for 20 seconds.<\/li>\n<li style=\"font-weight: 400;\">Stir the mixture and microwave in 10-second increments, stirring in between, until the mixture is completely smooth, 30 to 40 seconds total.&nbsp;<\/li>\n<li style=\"font-weight: 400;\">Scoop the banana ice cream into 4 bowls, and top each with one-quarter of the peanut butter sauce and&nbsp;\u00bd tablespoon of the roasted peanuts.&nbsp;<\/li>\n<\/ol>\n<p>Per serving: 164&nbsp;calories, 4&nbsp;g protein, 26&nbsp;g carbohydrates, 3&nbsp;g fiber, 14 g total sugar, 6&nbsp;g fat, 1.0&nbsp;g saturated fat, 4&nbsp;mg sodium, 451&nbsp;mg potassium (13% DV), 17&nbsp;mg calcium (2% DV), 48&nbsp;mg magnesium (12% DV), 0.017&nbsp;mcg B12 (0% DV), 0.43&nbsp;mg B6 (22% DV), 0.5&nbsp;mg iron (3% DV)<\/p>\n<hr>\n<p><strong>About the book:<\/strong><\/p>\n<p><em>Healthy, Happy Pregnancy Cookbook<\/em> is the perfect guide for pregnant women.
