It can even be the bread for a sandwich. Think of this corn muffin recipe as portion-controlled cornbread. Because it&#8217;s packed with fun stuff like whole kernels of corn, spices and bell peppers, it has more flavor and a more exciting texture than the classic recipe (no hate on the classic, though). It&#8217;s also whole grain, which means that while you&#8217;re enjoying all of that flavor, sans heartburn triggers, your body is benefitting from the extra fiber and nutrients that whole grains bring along.&nbsp;<\/p>\n<p><strong>Makes 12 muffins&nbsp;\/ Prep time: 10 minutes \/ Total time:&nbsp;35 minutes<\/strong><\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>Olive oil spray<\/li>\n<li>1 cup yellow cornmeal<\/li>\n<li>\u00be cup whole wheat flour<\/li>\n<li>2 tablespoons sugar<\/li>\n<li>1\u00bd teaspoons baking powder<\/li>\n<li>\u00be teaspoon ground cumin<\/li>\n<li>\u00be teaspoon smoked paprika<\/li>\n<li>\u00bd teaspoon baking soda<\/li>\n<li>\u00bc teaspoon coarse sea salt<\/li>\n<li>1 cup corn kernels (fresh or frozen and thawed)<\/li>\n<li>\u00bd cup diced green bell peppers<\/li>\n<li>1 cup low-fat milk or unsweetened dairy-free alternative<\/li>\n<li>\u00bc cup coconut oil&nbsp;<\/li>\n<li>1 tablespoon apple cider vinegar<\/li>\n<li>2 large eggs<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li style=\"font-weight: 400;\">Preheat the oven to 375<span style=\"font-weight: 400;\">\u2109.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Coat a 12-cup muffin tin with olive oil spray.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">In a large bowl, combine the cornmeal, flour, sugar, baking powder, cumin, paprika, baking soda, and salt.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Stir in the corn and bell peppers. Set aside.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">In a seperate bowl, whisk the milk, oil, vinegar, and eggs. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Pour the liquid mixture into the dry mixture and stir until all the dry ingredients are moistened. Do not overstir.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Fill each cup of the muffin tin evenly with batter.
