This is one of those recipes, because it&#8217;s a true crowd pleaser. It&#8217;s got pasta, but there are more veggies and chicken than pasta, so it&#8217;s a dish that will leave you feeling satisfied and energized. The thyme pairs perfectly with the mushrooms and chicken and gives this dish a cozy, home-cooked Sunday night dinner around the family table vibe.<\/p>\n<p><strong>Makes 4\u00a0servings \/ Prep time: 10 minutes \/ Total time: 20 minutes<\/strong><\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>2 cups dry whole grain farfalle (bow-tie) pasta<\/li>\n<li>4 tablespoons olive oil, divided<\/li>\n<li>2 cups sliced mushrooms<\/li>\n<li>2 cups sliced zucchini<\/li>\n<li>1 tablespoon chopped shallot<\/li>\n<li>2 teaspoons dried thyme<\/li>\n<li>\u00bd teaspoon coarse sea salt<\/li>\n<li>1 pound skinless, boneless chicken thighs, coarsely chopped<\/li>\n<\/ul>\n<p>Shallots deliver a flavor somewhere between a mild onion and garlic and can be better tolerated than onions and garlic by some people with heartburn. If you are missing onion terribly, try adding cooked shallot to a meal to see if it works for you.<\/p>\n<h4><strong>Directions<\/strong><\/h4>\n<ol>\n<li style=\"font-weight: 400;\">Prepare the pasta according to the package directions.<\/li>\n<li style=\"font-weight: 400;\">Heat 2 tablespoons of the oil in a large skillet over medium-high heat. Add the mushrooms, zucchini, and shallot and saut\u00e9 until tender and golden brown, about 10 minutes.<\/li>\n<li style=\"font-weight: 400;\">Add 1 tablespoon of the oil, the thyme, salt, and chicken and cook until the chicken is cooked through and lightly browned, about 6 minutes.<\/li>\n<li style=\"font-weight: 400;\">Add the remaining 1 tablespoon oil to the skillet along with the cooked pasta and toss gently.
