This omelet has mirepoix that is lacking in onion (so you skip the heartburn) but not in rich, savory flavor. It&#8217;s also loaded with protein, to keep you extra-satisfied without feeling overly stuffed.<\/p>\n<p><strong>Makes 2&nbsp;servings \/ Prep time: 5&nbsp;minutes \/ Total time: 25 mintutes<\/strong><\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>4&nbsp;teaspoons olive oil, divided<\/li>\n<li>2 tablespoons finely chopped celery<\/li>\n<li>2 tablespoons finely chopped carrots<\/li>\n<li>1 cup finely chopped cauliflower<\/li>\n<li>Pinch of coarse sea salt<\/li>\n<li>4 large eggs<\/li>\n<li>1 tablespoon water<\/li>\n<li>\u00bd teaspoon dried oregano<\/li>\n<li>\u00bd cup shredded cheddar cheese<\/li>\n<\/ul>\n<h4><strong>Directions<\/strong><\/h4>\n<ol>\n<li style=\"font-weight: 400;\">In a medium skillet, heat 2 teaspoons of the oil over medium heat. Add the celery and carrots and saut\u00e9 until they begin to soften, about 4 minutes.<\/li>\n<li style=\"font-weight: 400;\">Add the cauliflower and salt and continue to cook, stirring often, until the cauliflower is soft and lightly browned, about 8 minutes more.<\/li>\n<li style=\"font-weight: 400;\">Set aside the veggie mixture and lightly wipe out the skillet with a paper towel.<\/li>\n<li style=\"font-weight: 400;\">In a bowl, whisk the eggs, water, and oregano. Heat the remaining 2 teaspoons oil in the skillet over medium heat.<\/li>\n<li style=\"font-weight: 400;\">Add the egg mixture and, using a spatula, gently push through the egg mixture a couple times as it begins to cook so the liquid egg at the top makes contact with the pan&#8217;s surface.<\/li>\n<li style=\"font-weight: 400;\">Cook the eggs until just firm, about 3\u00bd minutes.&nbsp;<\/li>\n<li style=\"font-weight: 400;\">Sprinkle the veggie mixture and the cheese onto half of the cooked omelet and fold the empty side over the filling to cover.
