An edible squash bowl filled with chili. Plus, starchy squashes, such as delicata, provide fiber, vitamin powder, and major potassium &#8212; and they don&#8217;t get soggy at the end of the meal. And you can eat them as leftovers without them turning to a paste. Wow! Bread bowls aren&#8217;t sounding that cool anymore. Squash bowls are where it&#8217;s at!<\/p>\n<p><strong>Makes 4\u00a0servings \/ Prep time: 15\u00a0minutes \/ Total time: 1 hour<\/strong><\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>Olive oil spray<\/li>\n<li>2 large delicata squash (or acorn squash if you can&#8217;t find delicata)<\/li>\n<li>\u00be teaspoon sea salt, divided<\/li>\n<li>1 tablespoon extra-virgin olive oil<\/li>\n<li>1 cup chopped red or yellow onion<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>1 pound ground grass-fed beef or bison<\/li>\n<li>1 tablespoon chili powder<\/li>\n<li>2 tablespoons tomato paste<\/li>\n<li>2 teaspoons dried oregano<\/li>\n<li>2 teaspoons ground cumin<\/li>\n<li>\u00bd teaspoon ground cinnamon<\/li>\n<li><span style=\"font-weight: 400;\">\u00bc teaspoon freshly ground black pepper<\/span><\/li>\n<li><span style=\"font-weight: 400;\">2 tablespoons finely chopped seeded poblano peppers, or 1 (4-ounce) can mild green chiles (optional &#8211; use only if you like spicy foods)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 (15-ounce) can kidney beans, rinsed and drained<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 (14.5-ounce) can diced tomatoes, with their juice<\/span><\/li>\n<\/ul>\n<h4><strong>Directions<\/strong><\/h4>\n<ol>\n<li style=\"font-weight: 400;\">Preheat the oven to 400<span style=\"font-weight: 400;\">\u2109. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Coat a baking sheet with olive oil spray.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Cut both squash in half lengthwise and discard the seeds. Place the squash halves facedown on the baking sheet and bake until softened, 25 to 30 minutes.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Remove from oven, flip the halves over, and season with\u00a0\u00bd teaspoon of the salt, sprinkling it evenly over the 4 halves.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">While the squash cooks, heat the oil in a large saucepan over medium heat. Add the onions and garlic. Saut\u00e9 until the onion softens, about 5 minutes.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Add the meat and cook, breaking the meat up with a wooden spoon, until crumbled and browned, about 10 minutes more.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Stir in all the remaining ingredients (chili powder through tomatoes) and the remaining\u00a0\u00bc teaspoon salt and bring to a boil.<\/span><\/li>\n<li style=\"font-weight: 400;\">Reduce the heat and simmer until the mixture has thickened and most of the liquid has evaporated, about 22 minutes.<\/li>\n<li style=\"font-weight: 400;\">Fill each squash half with one-quarter of the chili mixture.<\/li>\n<li style=\"font-weight: 400;\">Bake the squash until fork-tender, about 10 minutes more.<\/li>\n<\/ol>\n<p>Per serving: 438\u00a0calories, 34\u00a0g protein, 53 g carbohydrates, 13\u00a0g fiber, 12\u00a0g total sugar, 13\u00a0g fat, 4\u00a0g saturated fat, 532\u00a0mg sodium, 2052\u00a0mg potassium (59% DV), 160\u00a0mg calcium (16% DV), 108\u00a0mg magnesium (27% DV), 2.2\u00a0mcg B12 (37% DV), 1.111\u00a0mg B6 (56% DV), 7.7\u00a0mg iron (43% DV)<\/p>\n<hr \/>\n<p><strong>About the book:<\/strong><\/p>\n<p><em>Healthy, Happy Pregnancy Cookbook<\/em> is the perfect guide for pregnant women.
